This sweet, light-colored miso is made with an abundance of koji.
Much like polishing brown rice to make white rice, we gently remove the outer skin of the soybeans (hulled soybeans), soak them overnight, and then slowly simmer them the next day. The result is a smooth and refined miso with minimal impurities.
Beyond miso soup, it’s also perfect as a miso paste or dressing, or diluted with sake and mirin for marinating meat or fish.

This miso contains no added alcohol, allowing its natural microorganisms and enzymes to remain active. We encourage you to enjoy the evolving flavors as it continues to ferment, but if you prefer to preserve your favorite stage of flavor, we recommend storing it in the freezer.
