Tokusen Koji Miso
A sweet miso with a mild taste and a pleasant aroma of rice koji.
Aogen’s Shio Koji Sauce
When pickling, be sure to thoroughly wipe off any moisture from the ingredients to enhance the flavor.
For meat or fish, we recommend wrapping them in gauze, placing them in a clear zip-lock bag, and marinating them in Shio Koji Sauce.
Miso-Pickled Cucumber
Pairs wonderfully with hot porridge, freshly steamed rice, or ochazuke.
Miso-Pickled Burdock Root
We recommend trying it in "Chicken and Burdock Pilaf," made with thinly sliced miso-pickled burdock and chicken.
It can also be used as a filling for thick sushi rolls, or simply wrapped in seaweed for a delicious nori roll.
Amazake Starter
Let it ferment until it doubles in volume, then serve warm.
For enhanced flavor, try adding a pinch of salt or some ginger to your taste.
On hot days, it can also be enjoyed chilled.
