Made from soybeans grown in Tochigi Prefecture, carefully hulled, soaked, steamed, and fermented.
This long-aged, reddish-hued grain miso melts smoothly on the tongue when eaten as-is.
We highly recommend enjoying it raw to fully appreciate its deep, mellow flavor.

Crafted from Tochigi-grown soybeans that are hulled, soaked, and steamed, then filtered for an exceptionally smooth texture.
This delicately refined miso is perfect not only for miso soup, but also for raw preparations such as karashi miso (mustard miso) or kinome miso (Japanese pepper leaf miso).
This miso contains no added alcohol.
Microorganisms and enzymes remain active within it.
We deliver it in a deliciously fermented and matured state, ready to enjoy.
However, when stored at room temperature or in a household refrigerator, the microorganisms and enzymes continue to work, causing the miso to mature further over time.
