Koji-Making Workshop — Three Days of Brewing with a Professional in the Koji Room

Rice koji is alive.
By witnessing the moment it is born and nurtured, you’ll experience the fascinating wonder of fermentation firsthand.

This hands-on class lets you experience the full three-day rice koji–making process—from steaming the rice to producing finished koji—under the guidance of seasoned professionals. You’ll even work inside a traditional koji room, a space that is rarely accessible to the general public.

You will take home one tray of freshly made koji (approx. 750g).

◉ Due to ingredient preparation, cancellation fees apply starting 5 days prior to the class date.


       5 days prior to 3 days prior: 30%

       2 days prior to 1 day prior: 80%

       Same day or no-show: 100%

 

Cancellations made 6 days prior or earlier will receive a full automatic refund of the class fee.
Cancellations cannot be processed online starting 5 days prior. Please contact the store (Aogen Main Store) by phone or email.
